Serves 4-6 as appetizers

2 cups cooked beans, drained
Several dashes hot sauce
1–2 Tbsp. fresh lime juice, or to taste
Salt and cracked pepper
¼ cup finely chopped green onions
2 Tbsp. finely chopped cilantro
½ cup rolled oats

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper and lightly brush with oil.
  2. In a food processor, pulse together the beans, hot sauce, lime juice, and salt and pepper to taste. Pulse in the green onions and cilantro.
  3. Put the oats in a shallow dish.
  4. Using a tablespoon, scoop out the bean mash and then use your hands to shape the bean mixture into small patties; dip each side into the oats before putting on the prepared baking sheet.
  5. Bake for 7 minutes or until they begin to look firm. Flip and continue baking until firm and cooked through, about 8 to 10 more minutes.
