Sweet, juicy cherries and crisp watermelon come together in this refreshing summer crostini, balanced with tangy whipped feta and a drizzle of honey. Perfect for warm-weather gatherings, this easy appetizer is bright, flavorful and irresistibly fresh.

Cherry-Watermelon Crostini with Whipped Feta

Whipped Feta
6 oz. feta, crumbled
2 oz. cream cheese, softened
2 Tbsp. olive oil
Pinch coarse Kosher salt
Pinch cracked pepper

Cherry-Watermelon Crostini
2 Tbsp. red onion, finely chopped
2 cloves garlic, finely chopped
2 Tbsp. white balsamic vinegar
4 cups cubed (½ inch) seedless watermelon
2 cups pitted cherries, roughly chopped
2 Tbsp. finely chopped fresh mint
20-25 (½ inch-thick) diagonal baguette slices, toasted or grilled
¼ cup honey (or hot honey, if desired)

Place the feta and cream cheese in the bowl of a food processor. Cover and process until well mixed. Add olive oil, salt and pepper and process until smooth.
In large bowl, gently mix red onion, garlic, vinegar, cubed watermelon, chopped cherries and mint to coat.
Spread whipped feta mixture on toasted baguette slices. Spoon cherry-watermelon mixture over whipped feta. Garnish with additional mint leaves and drizzle with honey, if desired. Make it a meal by serving with grilled chicken and a light green salad! Have some leftovers? The whipped feta can be stored in an air-tight container in the fridge for up to three days.
