Ritz Cracker Toffee

50 Ritz crackers
1 cup unsalted butter
1 cup brown sugar
2 cups good quality semi-sweet chocolate chips
2 tsp. sea salt flakes
Toppings of your choice (sprinkles, M&Ms or chopped nuts)

  1. Preheat the oven to 375°F. Line a rimmed 12-by-17-inch baking sheet with parchment paper.
  2. Place Ritz crackers on prepared pan in a single layer.
  3. Once the oven is preheated, stir together the butter and brown sugar in a saucepan over medium to medium-high heat. Bring to a boil. Stir gently and constantly for 2 to 3 minutes until caramel mixture is thickened. 
  4. Pour hot caramel mixture over Ritz crackers. Spread evenly with a spatula. 
  5. Bake for 5 minutes or until the edges start to bubble and brown. 
  6. Remove from the oven and immediately sprinkle with chocolate chips over the top in an even layer. Let sit for about 5 minutes until chocolate chips are glossy and super melty. Then, use a spatula or the back of a spoon to spread the melty chocolate evenly over the top. 
  7. Let sit for 2 minutes so the chocolate sets a bit. Sprinkle sea salt and your preferred toppings over the top, such as sprinkles, M&Ms or chopped nuts. 
  8. Place pan in the freezer for 1 hour to set firmly. Break the slab of cracker toffee into pieces.
