“Through our cooking workshops and Meal Box kits, we show participants how to save a good amount of money by buying in bulk, prepping, preserving and simply cooking at home. Families were often shocked when we showed how a simple recipe for turkey tacos can actually be less expensive to feed a family of four than four value meals at the local drive-thru.”

Serves 4 to 6

Ingredients

Taco Seasoning

1 tsp. ground cumin

1 tsp. coriander

1 tsp. red pepper flakes

2 tsp. smoked paprika

4 tsp. chili powder

 

Tacos

16 oz. cooked turkey breast, shredded or diced

3 Tbsp. taco seasoning

Olive oil

½ cup tomato sauce

½ cup chicken broth

Juice of 1 lime

12 corn tortillas

Salt and pepper, to taste

 

Toppings

Shredded lettuce

Quick-pickled radishes (see recipe below)

Sliced avocado

Chopped tomatoes

Lime wedges

 

Directions

To make the taco seasoning

Put all the spices in a lidded jar and shake. Store in a cool, dark place.

 

To make the tacos

Put the cooked turkey breast in a bowl and sprinkle with taco seasoning. Mix to combine. Next, lightly coat a large skillet with oil and set over medium heat. Add the seasoned turkey and sauté until the seasoning is fragrant, about 1 minute. Stir in the tomato sauce, chicken broth and lime juice. Simmer until liquid has reduced by half and the turkey is completely heated through, 5–6 minutes.

 

To warm the tortillas

Wrap them in a damp paper towel and microwave for 30 to 60 seconds or wrap them in foil and place in a 350-degree oven for 5 to 10 minutes. Divide the turkey between the tortillas, season with salt and pepper to taste, and serve with the toppings.

 

TIP: You can easily make taco seasoning that is far tastier (and costs less) than the commercial variety. Keep the spice blend on hand to rub on steak or chicken and give stews and soups a lift.
